Ingredients:
- 2 mugs of flour
- 2 mugs mixed fruit
- 1 mug brown sugar
- 1 mug hot tea
- 2 eggs
- 1/2 tsp mixed spice
- 2 large ripe bananas
Method:
Mash the bananas and mix in with sugar. Soak the fruit in the hot tea for 24 hours, then mix in sugar. Beat the eggs and add to the fruit, and mix in the spice and flour.
Using loaf tins, grease them and line with greaseproof paper. Bake in the oven at Gas Mark 4 (180˚C, 350˚F) for 1¼ hours. Tea bread freezes well.
